Vegetable salad, primarily available in free trade usually of second-grade quality or even refuse made in the Dairy Products Department from seasonal vegetables with the addition of vinegar, sugar, herbs, and artificial flavours (lemon, essential orange oil). Also available in good quality when delivered from Germany in 1944. Beginning in 1942, salad was rationed in portions of 150 to 500 grams. Mostly applied as a spreading for bread, in periods of extreme shortage it was cooked as soup. Salad was available in dairy shops.
