Vegetable salad, primarily available in free trade. It was made in the Dairy Products Department from seasonal vegetables with the addition of acid, sugar, herbs, artificial flavours (lemon, essential orange oil). Often made only from refuse with the addition of potato peels. In 1944 [products] of better quality were delivered to Litzmannstadt, therefore salad was rationed as first-grade and second-grade quality. From 1942, salad was rationed in portions of 100 to 500 grams. Mostly applied as a spreading for bread, in periods of extreme shortage it was cooked as soup. Salad was available in dairy shops.
